David Wilson Manager

Before joining the team at Bistro Vue I worked in an exclusive five star Hotel in Scotland where I managed an award winning Restaurant and Bar, it was here I developed a passion for food, wine and service. When arriving in Melbourne I had to find the right place to develop this further and I soon found out that there was only one choice.

What I enjoy most about my role in Bistro Vue is the ability to make people happy with an honest approach to food, wine and service in an environment where the customer comes first.

I began my career in hospitality in Brussels just over 10 years ago where I developed a passion to work for top restaurants. After Belgium I relocated to Cork in Ireland where I worked behind the bar in a five star surrounding. From there I proceeded to the UK where I worked for the Hotel du Vin group for 5 years. I helped open One Devonshire in Glasgow as Head Barman then moved to Cambridge where I spent the next three years. In 2010 I moved to Melbourne to immerse myself in the cultural captial of Australia. The recent renovation of Bistro Vue including its new bar gives me great scope to develop this part of the offering.

I left Malta at 18 for an adventure in the UK and spent a year working at the Hilton in Edinburgh. After spending time in Europe I moved back home and was later offered an Executive Chef position at RIU in Spain. I spent three years with RIU and then moved to the Gold Coast, as I love the beach, and worked for Palazzo Versace.

Joining the Bistro Vue team is one of the highlights of my career and working for such a renowned chef like Shannon was always a dream. It’s a great reward to give our guests an experience they never forget.

After completing a hospitality degree at university in Oxford, UK I joined Malmaison and Hotel du Vin group's graduate trainee management program. Over five years working in different aspects of hospitality I was appointed General Manager of Hotel du Vin, Poole where I spent my time developing the hotel and training staff in customer service. In 2010 I needed a change in direction and moved to Australia where I landed on my feet at Vue de monde, leading the team at Café Vue at 401 St Kilda Road. Now at Bistro Vue I continue to look foward to working with a great team and progressing my career.

I grew up in Southern Western Australia, a place inhabited by gourmet food specialisits and world-class wineries. This environment stimulated my interest for cultural diversity so I began to seek opportunities in the world of fine wine. I took the long route to Melbourne working in Perth and then the Whitsundays landing a position as a sommelier at Vue de monde. My role offers me a great deal of scope to share the greatest wines with the greatest guests all while being situated in a modern and dynamic setting. The philosophy of the wine program for Vue de monde is one that I share: the perfect wine with the perfect dish at the perfect time.

I left Ireland when I was 18 and completed a degree in Hospitality and Human Resources in Scotland. After 6 wonderful years there and with experiences such as working on a luxury cruise ship, at a five star golf resort and for a Michelin stared restaurant I made the snap decision to move to Melbourne and work at Bistro Vue.
Bistro Vue is a special place where there is a genuine interest and passion for food and wine. I was once told that “hospitality is the act of treating complete strangers as if they are close friends". It is a great testament to the whole team when we see guests enjoying their time here and often returning again and again.
