Matthew Haines
Vue Events Coordinator

I was born in the Hunter Valley, New South Wales and started in hospitality after finishing university working at Roberts Restaurant at Tower Estate. I joined the Vue de monde front of house team in 2008 and was promoted to manager of Café Vue at 401 St Kilda Road.

I have enjoyed progressing into the Vue de monde events team bringing a great deal of enthusiasm and knowledge about the events spaces. My role focuses largely on responding to events enquiries and developing relationships with clients to understand their needs.

Marvin Holder - Vue Events

My passion for hospitality can be attributed to my Caribbean heritage where a love affair with food began as a child cooking alongside my Grandparents. During my teens I discovered a love for interacting with customers and a knack for operations while working in my family catering business. I completed an associate degree in Culinary Arts and Business Management where I was selected to travel to Guyana to help develop a hotel and a restaurant. I then completed a Bachelor of Hotel and Restaurant Management in New York, travelling and working in China and Italy before finally making the move to Vue de monde. In my current role I run all the events held in our events space on Level 55 at Rialto. I work closely with our events concierge to understand what every client is looking for and to work with the events team to deliver this.

Florent Gerardin

Vue Events Chef

I started my career where I grew up as a young teenager in La Rochelle, France. One of my first jobs was as a chef in the two Michelin starred restaurant Coutenceau working under Richard and Christopher Coutanceau. In Paris I worked for Alain Ducasse and Joel Robuchon, I learnt the technicality of food with Ducasse and the love of produce from Robuchon.

I then moved from Paris to Singapore and worked for Emmanuel Stroobant at Saint Pierre where I learnt to keep an open mind. My travels brought me to Melbourne and I have been sous chef at Vue de monde since early 2009.

Hospitality has always been a part of my life. Whilst attending school I worked part time in a pastry kitchen where I completed certificate three in hospitality. From there I studied an Advanced Diploma of hospitality management whilst training as Front of House for the Windsor Hotel. I continued to work in various role and venues within the hospitality industry and in 2009 my beautiful daughter Eleanor was born. Now at Vue de monde, I've found a home where the skills I have gained are challenged every day in spectacular surroundings. I am very excited to see where life takes me from here onwards
